One area I never fall off the bandwagon with is making sure every day is rich in fresh organic unprocessed food.
I was very sick about 9 years ago and initially healed through an overhaul in my nutrition. And taking a break.
So, quality healthy pure food is top of the priority list. And where there's priority, there's always time.
Saying that though, I know cooking healthy meals is a time issue for many.
The meal in the pic is a 15-minute dinner (quicker than takeaway crap), start to finish. Steamed veggies & brown rice penne with a fat dollop of pesto stirred through. Want it creamy? Add oat cream. Serve with cracked pepper & rock salt with a squeeze of lemon!

The more variety in the colours the more you're helping your brain, skin, prostate, vascular, eye, heart & reproductive health! Get in!
Here I've made a vegetable soup which can also be strained and used as a healing broth or stock.
Whatever way you consume it, it's healing for the gut, full of vitamins and minerals, super easy to digest, is anti-inflammatory and is super delicious.
Homemade almond milk is SO DELICIOUS!!!
It's a lot easier to make than you think... besides soaking the almonds it's also incredibly fast to do... a few minutes!!

Sunday night dinner!
Vegan penne pasta with a roasted cherry tomato sauce, dressed with fresh mint from the garden.
Woke with a sore throat. A gym bag packed for a morning class was unpacked in favour of an extra hours sleep.
Today's fix = hot lemon water, LOADS of Vitamin C, nutrient loaded smoothie and home made chicken soup.
My recipe for Chicken Soup is a take on the @hemsleyhemsley version which is amazing!

This little number is a winner for having friends for dinner and also freezes amazingly well for quick lunch or dinner in the week.
It's a perfect balanced vegan dish. Served with short grain brown rice and brimming with good fats and veggie protein.
