Hearty Vegetable Soup- Vegan, Gluten Free
No matter the season soups are super nourishing! Here I've made a vegetable soup which can also be strained and used as a healing broth or stock. 🥕🥔🥦
Whatever way you consume it, it's healing for the gut, full of vitamins and minerals, super easy to digest, is anti-inflammatory and is super delicious!!! You can use up left over veggies too!
Hearty Vegetable Soup
Serves 4-6
INGREDIENTS:
Organic, preservative free wherever possible -
2 Large Leeks
Chunk Fresh Ginger
Chunk Fresh Turmeric
4 Cloves Garlic
1 Tbsp. Coconut Oil
Bunch of Thyme, Sage or Rosemary
3 Large Carrots
2 Courgettes
½ Bunch Celery
300g Cavelo Nero (or other greens)
Filtered Water to cover ingredients (option to use bone or veggie broth)
To Serve - Lemon juice, Tamari and Chilli
RECIPE:
Slice leeks, garlic, ginger & turmeric.
Sizzle in large pot with coconut oil for about 5 minutes.
Add chopped carrots and herbs of choice (no need to chop - just add the whole bunch). Add 1 litre of filtered water, veggie or bone broth and bring to a simmer for 20 minutes.
Add chopped celery, courgette - simmer for 5 minutes.
Take off heat and add chopped cavelo nero (or other greens).
Serve with a good squeeze of lemon juice, a dash or two of tamari and a pinch of fresh or dried chilli.
