Cajun Chicken Rainbow Salad- Gluten Free

Who says you can't make friends with salad!? The star of this salad is the colour! The more variety in the colours the more you're helping your brain, skin, prostate, vascular, eye, heart & reproductive health! Get in!
Cajun Chicken Rainbow Salad
Serves 2
INGREDIENTS:
Organic preservative free wherever possible -
1 Organic Chicken Breast*
1/2 Can Coconut Milk
1 Tbsp. Cajun Spices
2 Handfuls Baby Spinach
1 Beetroot - grated or spiralised
1/2 Punnet Cherry Tomatoes
1 Red Pepper
To serve - Edible Flowers & Fresh Mint
* You can use tofu to make this vegan or even try aubergine/eggplant cubes as an alternative. Try adding fresh herbs for more flavour!
METHOD:
Chop chicken into cubes, put into a bowl and cover with Cajun spices and ½ can coconut milk.
Chop all the salad ingredients (you could use any bright salad ingredients that you like).
Sizzle the marinated chicken in a pan, and add to the salad.
