Roasted Cherry Tomato Penne Pasta - Vegan, Gluten Free, 15-Minute Meal

Vegan penne pasta with a roasted cherry tomato sauce, dressed with fresh mint from the garden.

Roasted Cherry Tomato Penne Pasta

Serves 2

INGREDIENTS:

Organic where possible -

  • 2 Cloves Garlic

  • 1 Onion Diced

  • 1 Courgette Diced

  • 1 Red Pepper Diced

  • 350g Jar Organic Cherry Tomato Pasta Sauce (I use Mr Organic brand)

  • 100g Brown Rice Penne

  • To serve - Fresh Mint & Parmesan (Vegan Option)

METHOD:

  1. Stir fry the garlic and onion in a pan.

  2. Add the chopped courgette and red pepper.

  3. Add the organic cherry tomato sauce and season with salt and pepper.

  4. Turn on low heat and simmer 10 mins.

  5. Put the brown rice penne on to boil for 10 mins.

  6. Once ready drain and serve with the sauce.

  7. Add the chopped fresh mint and Parmesan (vegan if desired) to serve. Enjoy!
