Vegetable Pesto Penne - Vegan, Gluten Free, 15-Minute Meal

One area I never fall off the bandwagon with is making sure every day is rich in fresh organic unprocessed food. I was very sick many years ago and initially healed through detox and an overhaul in my nutrition. And taking a break.
So, quality healthy pure food is top of the priority list. And where there's priority, there's always time. Saying that though, I know cooking healthy meals is a time issue for many.
This meal is a 15-minute dinner, start to finish!
Vegetable Pesto Penne
Serves 1 (add to the recipe for more people if needed!)
INGREDIENTS:
Organic preservative free wherever possible -
50g Brown Rice Penne
1/4 Cauliflower
1/2 Carrot
1/4 Broccoli
1/4 Courgette
Basil Pesto
Optional – Oat Milk & Lemon Juice
METHOD:
Chop vegetables to your desired liking and use the amounts you’d like for yourself for a meal.
Put a pot of water on to boil, add brown rice Penne to cook for 10-minutes.
While the pasta is boiling, put carrot and cauliflower on to steam first for 5-minutes. After 5-minutes add the broccoli and courgette to the carrots and cauliflower. Turn off after another 5-minutes. Total steaming time is 10-minutes.
Drain the pasta, add back to the pot and then add the vegetables.
Stir through a few spoons of pesto. Add a splash of oat milk for a creamy texture.
Serve and add a squeeze of lemon juice if desired.
